Lemon Honey (Lemon Curd)

Lemon Honey (Lemon Curd)

Two lemons is all it takes to make this liquid gold, lemon honey (curd) to spread on all your favourite sweet treats.



½ lb white sugar

Grind the Rind and juice of 2 lemons

2ozs butter

2 eggs



Whisk the eggs

Add water to the lower double boiler on the stove. In the top double boiler add the butter, sugar and lemon juice and rind.

Slowly add the eggs and mix constantly until the butter has melted and all the ingredients are mixed together to create a smooth texture.

Slowly stir until the mixture has thickened and slightly changed shade (approx. ½ hour).

Serve straight away or pour into sterilised jars and refrigerate

Tip: For best results use this quantity for each batch.
