Marmalade

If you have abundant citrus trees, this family marmalade recipe is just what you need.

Ingredients:

Citrus Fruit

Sugar

 

Method:

Use Grapefuit or Seville Oranges or Mix of Oranges and Lemons.

Wash the fruit, cut each one in half and squeeze out the juice or use an orange grinder. Then cut into pieces small enough to fit into a mixer (we find 1/8 to be the best size) and remove all pips.

Mix and blend until the pieces turn to mush.

Combine the pulp and juice into one container and weigh.

Use the following fruit to water ratio: 220gm for fruit to 4 cups of water.

Add the water into the same container (we prefer to use a large crock pot) with the juice and pulp and leave to stand and soak overnight.

Bring to the boil for 1 hour.

Ensure the mixture has reduced by half before the next step.

Add sugar - 1lb (450g) sugar to 1/4 lb (100g) fruit.

Slowly add and stir until all the sugar is dissolved.

Simmer on high for 30 mins, and stir regularly (otherwise it will stick and boil over).

Now to test if it's ready. Put a little spoonful in a ramakin and cool in the fridge, once cooled, tip the dish slightly to see if a skin has formed.

If no skin has formed, keep boiling until it forms a skin.

If there is a skin. Pour straight into hot sterilised jars.

Voilà! Enjoy with breakfast.
