Summer Tart
Frangipane filling ingredients:
100g Soft butter
1/2 cup Castor sugar
1 Egg
1 Egg yolk
1 Teaspoon vanilla
1 cup Almond meal
1/4 cup Plain flour
method:
Tart:
1) Pre bake the tart shell. tara likes to use the smitten kitchen unshrinkable sweet tart shell. recipe can be found here.
filling:
2) Beat butter sugar eggs, then remaining ingredients.
3) Smear your favourite jam over the base (about 4 tablespoons, be as generous as you like).
4) Spoon frangipane filling over and smooth the top to get fairly even coverage.
5) Top with sliced almonds/ berries/ or fruit of your choice
6) Bake 20-25 mins at 180c until golden brown
Best eaten warm!
